Kwati

Kwati is a traditional Nepali dish made with a mixture of nine different types of sprouted beans and legumes. The nine beans used in Kwati are typically black gram, green gram, chickpea, soybean, field pea, kidney bean, black-eyed pea, cowpea, and green pea.

To make Kwati, the nine types of beans are first soaked in water and allowed to sprout for several days until they are tender and crunchy. The sprouted beans are then cooked with various spices, such as cumin, turmeric, garlic, ginger, and chili peppers, along with onions, tomatoes, and sometimes meat.

Kwati is typically served as a thick soup or stew, and is a popular dish during the Nepali festival of Gunhu Punhi. It is believed to have various health benefits and is considered a nutritious dish, rich in protein, fiber, and other essential nutrients.
